1/2Choney or maple syrup if vegan
1avocado, mashed ~ 1/2 C + 1 Tbsp
1/2Cdark chocolate chips
Preheat oven to 350F. Have an 8" x 8" pan lightly greased, dusted with cocoa powder, and lined with parchment paper at the bottom. Set aside
In a medium to large bowl, whisk well: mashed avocado, honey and/or maple syrup, and coconut oil. Set aside.
Place chocolate chips in a bowl. Heat coconut milk until hot (just before it boils) and pour over chocolate chips. Stir until chocolate completely melts. Then pour melted chocolate into the avocado mix, and whisk very well until you get it as smooth and silky as possible.
In another large bowl, sift together flour, cocoa, baking soda, and salt.
Add avocado mix to dry mix, and using a spatula or a wooden spoon, stir until combined.
Pour batter into prepared baking pan, and place in the oven to bake for 30-35 minutes. See NOTES for times.
Remove and allow to slightly cool before diving in.
If you're following a vegan diet, then use all maple syrup instead of the honey and maple syrup combo. I've made it this way a few times and really liked it. But I personally prefer the taste of the honey/maple mix.Either way it will taste incredible I promise you!
