Ingredients
Salad
2romaine hearts, roughly chopped
4green onions, fine-rough chopped
1avocado, diced
croutons, recipe to follow
dressing, recipe to follow
Croutons
~6/7cstale bread, cubed
3tbspolive oil
2-3tsporegano, or fave dried herb
1/2tspgarlic powder,optional
1/2tsp sea salt, or to taste
Awesome Dressing! Yields = 3/4 c
1/4cwater
3tbspolive oil
1/4cfresh lemon juice
2tbspfresh avocado
2garlic cloveminced
2tbspnutritional yeast
1/2tbspmustard
3/4tspsea salt
1/4tspgarlic powder
1/8-1/4tspblack pepper,or to taste *Please see notes*
Instructions
Dressing
In a high speed blender, add all of the ingredients, and blend on high until dressing is completely emulsified. ~ 30-45 seconds. Pour over salad if ready to serve or store in a mason jar (or the like) and keep in the fridge.
Croutons
Preheat oven to 375F.
Place cubed bread pieces on a lined baking sheet, and drizzle the oil all over the bread, ensuring that all the pieces get oiled up! Sprinkle oregano (or thyme, whatever herb you love), all over bread and use your hands to help distribute the herb(s) and oil.
Place in the oven and bake for approximately 10-15 minutes, until croutons are a nice golden-brown color. Remove and allow to cool before using in the salad!
To assemble salad
Place chopped lettuce, onion, and avocado in a large serving bowl.
When ready to serve, add as much of the croutons as you desire, then add the dressing, and mix well so lettuce and croutons are coated nicely! Serve immediately + enjoy!
Notes
This caesar salad dressing is SO creamy and delicious! Add black pepper as desired. I personally don't add black pepper because I find I react to it! I cough a lot if I eat it fresh (not cooked in a dish)... so I avoid using it for that reason. But it'll give the dressing more kick which is good!It's such a simple yet awesome salad - it's super easy to make and everyone will love how it tastes :)Use croutons not just to make this Caesar salad, but add to soups and stews! Great as a snack too... unless I'm the only one who likes to snack on bread :D
