3-Ingredient Zucchini Fritters with Garlic Yogurt Dip
These delicious zucchini fritters are a great way to enjoy eating more vegetables! Loved by all; they're quick and easy to prep, and are always made allergy friendly. The best part is you only need 3 ingredients to make them!
Servings 26 fritters
- 4 C grated zucchini from about 3.5-4 zucchinis
- 1/2-3/4 C chopped onion about 1 large onion
- 3/4 C all purpose flour
- 3-4 Tbsp oil to pan fry I used coconut oil
- 1 1/2 Tsp sea salt
- 1/2 C coconut yogurt or whatever yogurt you use at home
- 1 garlic clove minced
- 1 Tsp lemon juice
- 1/4 Tsp sea salt
To make the zucchini fritters
In a large bowl, add grated zucchini and 1 teaspoon of salt. Mix well and set aside for 10-15 minutes. Then, squeeze the zucchini to release the liquid out. Discard the liquid and return the zucchini to the bowl (or use another bowl to make life easier).
Add chopped onion and the flour to the zucchini and stir well until ingredients are fully combined.
Using a 1.5" scoop (or similar size), scoop zucchini mixture and place on a parchment lined cookie sheet (see picture in post for reference). Alternatively, you can also just scoop and drop into hot pan (whatever you prefer).
Add oil to a large pan and heat on medium high. Once oil is ready, add a few of the scooped zucchini and gently flatten each one so it's flat and not ball shaped. Cook for 1-2 minutes, or until a nice golden brown in color, then flip and cook a further 1-2 minutes.
Remove fritters and place on a paper towel lined plate to help absorb excess oil. Repeat steps 3-4 with remaining zucchini. Serve immediately.
For best results when pan frying, make sure there's always some oil in the pan to fry. That way the zucchini fritters cook nicely.
These fritters are best enjoyed right away. But any leftovers can be stored in a lidded container in the fridge. Will keep for a few days. I honestly don't think you'll have much left over though ;)
The calorie count includes the oil used for pan frying.
