Vegetable Medley With Ramen

A luscious medley of brightly coloured vegetables, like carrots, zucchini, and eggplant, tossed with ramen to make this an amazing, super easy to prep, healthy meal. Priority allergens free.

  • 2 eggplant, peeled and cubed
  • 5 green zucchini, cut on a diagonal into thick slices
  • 5 carrot, peeled and halved - see notes*
  • 3-4 tbsp extra virgin olive oil
  • 1 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp sea salt, to taste
  • 4 ramen cakes
  • 4 roma tomatoes, peeled and cubed


  • Preheat oven to 400F. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, toss the vegetables in the olive oil and coat well.
  • Add onion and garlic powder, and salt to the vegetables and toss to combine.
  • Place vegetables on baking sheet and bake in the oven for 40 minutes, until vegetables are soft/cooked through and eggplants have browned edges.
  • Towards the end of the vegetables cooking time, make the ramen. Cook according to package instructions. Check notes for how I cook mine.
  • Remove vegetables from the oven, allow to slightly cool (minute or two) and taste. If more salt is desired, sprinkle a bit and stir to combine. Taste and repeat if necessary until you get desired taste.
  • To serve, divide ramen evenly into bowls, and top with loads of vegetables!


When cutting your carrots, cut in half, and if it's a large carrot, cut in half lengthwise.
I use rice ramen, which requires less cooking time. my package instructs me to cook it for 5 minutes. But I cook mine for 3-4 minutes. I find that extra minute really soften the noodles and makes them mushy once they cool. 
Use your favourite hot sauce to add some heat to your dish (if you like it hot!).
